There is still Balloon Battle. You can see the option briefly between Random Battles and Renegade Roundup, while he’s ranting about the old tracks for the mode.

Yep. But it’s treated like any other normal item (unlockable).

Correction: Apparently it is in the game, as a normal item unlockable with coins instead of a freebie DLC.

If you couldn’t finish a battle, at least it doesn’t sound like it’s working as intended. Maybe contact Nintendo’s consumer support (even though that would mean sending the Switch for repairs...).

I read that for Mutli-Switch local multiplayer, since the connection to other Switches take a controller’s wireless space, you can only do 2 controllers players per Switch. (So N Switches x 2 players)

Weird, on other sites where this was posted I only saw people saying to be wary of such projects, based on how their projections on how long the extra battery would last were irrealistic and showed poor understanding based on what they have planned as a small group of people compared to what bigger accessory

Most of the things talked in the video are present in Splatoon 1 so there is already a point of comparison for people that played the old one (or both via the Testfires “not demo” periods).
Unless you are not excited because you already have a Wii U with Splatoon 1 and don’t think there are enough improvements.
