Agreed! Between me and a friend, we probably have a couple hundred bottles* of whisk(e)ys, gins, rums, bourbons, etc... And some of them were first opened 20+ years ago. Never had a problem with any of them.

I think it would be tricky though, since DS9 made it fairly clear that Quark is always there, except for the occasional trip to Ferenginar or off-station trips related to their mom or the Grand Nagus. So I think at best, you’d have a couple weeks of Rom running the bar, since Rom accompanied Quark on most of the trips
