I read that Izzard came up with the character hanging the fork during the last meal. Izzard loved the idea that even when Hannibal was feeding the guy his own legs that he was still snarky and defiant enough that he was going to leave the world pissing off Hannibal one final time.

I always loved the idea that slytherine are pure evil and Gryffindor are obnoxiously full of themselves, whereas Ravenclaw and Hufflepuff are just the relaxed fairly normal places at Hogwarts.
