Windows is used by the majority of their target by default (market share) - as a result they focused on one client at a time hitting the biggest first.
Mint and Ubuntu aren't only targeted at beginners, but ease is definitely their target. All-too-often people get caught up in which distro they use and how it makes them more or less of a power user.

Mountain Lion seems to be pretty poorly done with lots of system overhead. Personally, I would get an SSD (if the budget allows) and go back to Snow Leopard. If you want a small SSD you could get a cage to replace the cd drive (if you don't use it) for a second 2.5" spot for your old HDD, I had success with this one.
Not with video, no. But for strictly audio purposes it works sufficiently. Probably not worth replacing something you already have.
SSH is enabled by default, it's a waste to bother plugging it into a monitor.
