Best possible outcome! Tumor entirely resected, no transfusions necessary, no nerve damage. Now coping with a grumpy, smelly*, exhausted, and slightly dopey teenager who wants to go home at 4 am and doesn’t understand why I can’t call the surgeon right now to release him. I’ll take it, with profound gratitude.

Been on this chicken bites kick myself. They’re very versatile on what you can pair them with and because they’re cut down (cubed 1in), I can just eat a few if I’m not feeling that hungry.

Made veggie chili on Saturday and used those leftovers to make chili mac with fusili. It was glorious.

Cheap nachos. Can of canned chili over Tostito’ss dip chips with cheese melted over it in a couple layers.  Carp but quick and not too bad.

I got a big ol’ bowl of salmon poke and crab salad over rice and edamame.

Have you tried an air fryer? Holy shit, total game changer. Get the Cuisinart one. You won’t be sorry.

Stromboli.

Grilled some porks chops I had marinated in garlic, maple syrup, and soy sauce and served them with some sautéed apples.

Soup and tater tots.

Five Guys. My son goes in for surgery today (was tomorrow when we ordered an enormous bag of fried grease) and we got him whatever he wanted before the surgery.

I sauteed some persimmons with butter, cinnamon, and brown sugar. Ate them on toast with brie. I love persimmons, so glad to see them at the store.

Shrimp fettucine alfredo, with some King’s Hawaiian rolls I heated up in the oven, and simple green salad with balsamic dressing I make.

Spaghetti. The sauce came out extra good this time, if I say it myself.

Leftover meatloaf, steamed asparagus topped with a creamy cheese sauce I whipped up.  Not bad.

Pizza. I love a good pepperoni pizza. 

Vegetarian hot and sour soup. Yum.

Pickings were slim at Trader Joe’s but they had Belgian Endive which I love (and it’s so easy to chop). I made an excellent salad: simple but tasty.

I too don’t fry often, but I just ordered an instant pot air fryer through Amazon’s Prime Day last week (via the recommendation of the people I just designated as godparents for my kids, due to some recent drama with actual blood-relatives... anyways...)

Ugh, cancer has not made this guy a better person. However, I still cannot stop myself from having a trauma response hearing someone is in end stage. After watching my mom die from advanced cancer earlier this year and my bff about 10 years ago, it’s just so hard not let it get me in the feels.
