BBC are always fuzzy on transmission dates up until the last minute so as far as i'm aware they haven't told us anything exact about series 7 yet. still i would wager they'll be done shooting way before the olympics start.

unfortunately that's wrong for 2 reasons...1st the olympics are july-august and filming for series 7 will be very complete by then. 2nd Doctor Who is produced by BBC Wales so they won't be affected by what is going on in London.
