I'm not sure why they stopped it but in the late 80's to late 90's the wta finals were 5 sets just like the men. So it is physically possible for the women to play best of 5 sets but the wta and the itf don't enforce it.

I've always thought that all players (men/women, singles/double) should play best of three, in from the first round through the semis, in all tournaments and save the best of five for the finals.
