The thing with etiquette is that you are right. It is almost equally rude to expect a +1 or to reply with a date when you weren't given one.
I am of the sane thought it isn't "your wedding" so much as it is a party you are hosting to celebrate the beginning of your marriage. These are your guests. If I invited a friend to a sit down dinner I would ask if they were bringing someone.
IMO it would be ruder to invite without guest.
Econ 101: You do what you can afford. If you can't invite every person with a guest you invite who you can with a guest.
Yeah I don't like to harp on etiquette because some of it is very not feminist and demeaning for women but things like giving adults guests kind of bothers me. Mr and I didn't invite old friends, room mates, etc. because we provided +1 for every person. We also had the bare essentials as far as wedding stuff.
Etiquette 101: any adult invited to an event is given a plus one.

Mr and I just planned our budget so every person over 18 had a guest. It is just kind of what you do around here. It also avoided the idea of as an outside party valuing who was in more meaningful relationships.
