Im not speaking for farmers markets. Im just saying that good baking apples are out there. Check around at small orchards, fruit stands and etc for varieties you like.

Actually the US has plenty of good baking apples its just that the large industrial size orchards only focus on 5 or 6 varieties that are good for eating.

The standard spice are good - but try one with just cinnamon - if you have flavorful apples its great.
