Those are expenses not profit. 

If you are spending $2 on the sauce per pizza - you are buying some over priced imported herbs or spending fortune on organic shit. If the business model works for you - cool.

But that the owners choice - spending profit to expand doesnt mean it wasnt profit.

If you are pulling near over 33% profit after labor costs - then more power to you.
