DQ VIII, hands down. Got a copy at launch, and still make a point of playing it once a year to completion (and often for a run or two through the bonus dungeon post-Rhapthorne). It's one of a very few games I'm still playing years on, joining Chrono Trigger, Final Fantasy VI, and Mega Man 2.

With RPGs (perhaps specifically JRPGs), the situation is actually kind of the opposite. No one particularly likes regular fights, it's all about the boss battles.
