I think the reasoning behind flipping once, or handling less, is that you aren't going to be squeezing the juices out and making the meat dry.

And then there's that whole issue of whether it was the server or the kitchen. You really can't blame the kitchen in front of a customer, because not only is it rude, but they'll also think you just forgot and put in the wrong thing and are now covering up for it.
As a veteran of the industry, 9 times out of 10 the reason it isn't right is because you didn't actually read what it was that you were ordering. .5 times it's the kitchen's fault for screwing it up, and .5 times it's the server's fault.
I can't tell you how many times that happened where I worked. The wife would come in and be 15 miles away from the right place, and then would be like: "will you just cancel that and make me a new one?"
Because even though it seems like there's 80 billion things on the menu, there's really only 15 or so items, and your "no tomato" is not hard to remember.
