I’d be pissed if I was a patron of this restuarant and other diners’ idiocy led to a great, classic dish being removed as an option. Carbonara is a specific dish and if people don’t want that specific dish, they should order something else.
Unless you have a personal chef, this is not the flex you think it is.
Before I go to a restaurant I look at the menu to see if I think I’ll enjoy the food. If the menu doesn’t appeal to me, I choose another place. I don’t go there, demand they make me something not on the menu and then throw a tantrum if they refuse.
I’m not sure why you would even go to a place that doesn’t make a dish the way you like it, then order that dish and instruct someone on how to make it completely differently. You’re way better off ordering something else or going somewhere that makes the dish the way you like it.
