When I realize this as a kid, I asked my mother. She suggested that it was because "good-bye"/"see you"/etc. would suggest finality to the viewers (that is, of the show), a bit like putting a period in the middle of a sentence.

This is why good role models are so vital as women get started in these fields. If students and young professionals don't see a strong example of success, they won't realize that they CAN succeed despite the 'boys' club' mentality.
