No, it’s still being affected by gravity in the video, which is retarding the acceleration provided by the wind by 9.8 m/s^2. If it actually “defied gravity”, the force of the wind would accelerate it precisely that much faster than it already did.

If the water were actually defying gravity, it would accelerate upwards 9.8m/s^2 faster than it is in the video. I call shennanigans.
