Can someone with more knowledge of the industry explain WHY there is this terror that someone will leak what it looks like?  have they shown that if people don’t know what a thing looks like initial sales are stronger?  is this an aspect of hype I don’t understand? it seems very consistent, and yet... So, I feel like the word choices for the categories are a little problematic, but I kinda agree with the categorization. I’ve always considered a sub, a taco, and a hot dog to be in the same category. unless you cut the bread ENTIRELY in half for the sub, at which point it becomes a sandwich.

oo, that sounds good. and... yeah, I am really passionate about cooking, with a lot of knowledge and using a lot of care... and I still never seem to salt properly while cooking. But at least I went from over salting to under salting, that’s a hell of a lot more correctable :P.

HA! interesting.  Yeah I have this wonderful baking steel I want to get some dry ice and try as a cold plate for ice cream at some point.  I didn’t think of using the salt block similarly! clever!

Actually there are other differences too, for instance Sel Gris doesn’t pull moisture as much as say, kosher (which is designed to), so when you are cooking with it it can make a difference beyond just “saltiness”

I... have never really been a fan of the Himalayan salt fad (though cooking on a salt block is an interesting concept I appreciate from it).

That said... all salt is salt, but there are some differences to be noted. Maldon salt, kosher salt, and Sel Gris all perform differently and tend to be good for different
