A sim? Nah, it’s a story driven open world RPG, like The Witcher 3, except with a customisable protagonist.

Mon Mothma isn’t running a starfighter to assault the Death Star. She makes a little speech in one scene and is never seen again; hell, the film doesn’t even bother to name her until the end credits, or actually tell what her role in the Rebellion even is. All that is later EU addition.

Restricted? Why not just have the new ships hyperspace in when you’ve completed the previous batch? That’d be a lot simpler way to handle the tiered gameplay.
The whole start over when killed-thing has gotten very uncommon in modern games. Checkpoints and autosaves have been standard anti-frustration features in most games for years. While games can still be plenty challenging, I’d say that the learning curve for them has only gotten easier over the years.
The Rebels were also exclusively white men until The Return of the Jedi, and the only black guy then was Lando and the only woman was Leia. Times have changed.

Maybe. But they made it clear at the time that it was nothing more than a preliminary announcement and that they wouldn’t start working on it beyond ideas stage before TW3 was complete.

Most of that time wasn’t active development. They didn’t properly start working on the game before The Witcher 3 was done in 2015, and didn’t commit their full resources before its DLC was out in 2017.
