In the original anime series they actually had small instances of animals in some shots. Real fish in the aquarium in the Cerulean City gym for example. They no longer show up in newer episodes though.

They've obviously come up with plenty, and if deviantart is any indication it's not that hard to create interesting fakemon based on animals they haven't officially used yet.

Actually they've already stated in the show a few times that some pokemon do in fact change personalities completely after evolving. Take Ash's charmander, pretty much any magikarp, abra, etc.
