I've watched some of this show but assumed the 8 out of 10 version broadcast at night. Do they play it in the same afternoon time-slot?

His sympathy definitely lies with the cooks. There was one Brit episode where he poached (excuse the pun) a chef he liked and gave her a job in one of his restaurants.

That's partially true but I think more important factor is that by the time Ramsey gets there these owners are already on there last leg financially. In the Brit version he seemed to have real affection for some of the befuddled owners whereas most of the American owners were sociopaths guaranteed to fail regardless of any pep talk or overnight makeover.
