Walk!, esp. along the Seine as it's gorgeous at night. Since Parisians tend to eat pretty late you could definitely grab a late dinner/drinks. Other than nightlife I don't really know what's to do between midnight and 6am (the metro stops running shortly after midnight and picks up again at 5am, so keep that in mind…
Dude, just walk. :D My husband and I rolled into Paris late and what we did was grab some food and go for stroll. That's what I'd do anyways. It's one of those places that's almost more beautiful in the dark.
