Ground them and place them in an open container, ala potpourri. If your fridge smells "off" take spent coffee grounds and place them in a small open container in your fridge, the grounds will eliminate some of that odor.

That's true, I feel the same way whenever I attempt the sear then oven steak method. The 275 heat is more gentle and I feel may contribute to the steaks looking like they have been aged after the oven cooking.
Yes is does have some similar features of a dry age, but not 100%. One thing of note is the steak needs to be COMPLETELY dry before putting it in the oven to start the reverse sear. I've done this multiple times and I failed to dry the steaks prior to oven cooking and the meat was great but better if made very dry to…
The only trade off is low shelf life, which honestly means that it lacks all the stabilizers AKA crap that's put into off the shelf dressing! Make your ranch, store it in the fridge, eat it fast and everyone's happy!
