According to this website, it’s merely a sub-genre of reality shows. I think it’s differentiating itself from competition reality shows and the like.

I don’t know for sure, but I think your #1 applies but #2 doesn’t. How heavily edited a show is has more to do with the production company and how they runs things rather than the medium/form. I think docu-series merely refers to how long the show runs (mini series vs. seasonal).
