I don’t really think Discovery is either boring or unfun, but I get your point about Game of Thrones in space. So many shows have become soap-operas filled with “oh shit, did they just do that” moments.
I like Discovery, but it doesn’t really feel like Trek to me. Even in DS9's darker moments, it’s still fundamentally optimistic which I think is an important part of Star Trek. Discovery is entertaining but it’s very much an outlier in Trekdom.

Natalie Portman will be Thor? I was never crazy about her Jane performance (felt a little mailed-in plus those movies are low points in the MCU) but it’s pretty interesting that they are going into that storyline in the films.
I use Plex a lot but it’s strictly for watching my own content. That seems to be its best use-case. I don’t understand how Plex thinks it’s going to get any share of the crowded streaming market.

Hanamonogatari should really be considered the Kanbaru arc of the Second Season (it basically wasn’t done in time). I agree that it kind of feels pointless compared to most other arcs, though.
