The tech industry pays more; the tech industry is faster paced with regards to innovation; the Big Three tend to offer slower upward mobility, and living in Detroit can be, well, cold and suburban.

I’ve found over the years that an hour’s rest uncovered in the fridge will help the breading stick better.  Just use a cooling rack to allow for air circulation.  Works wonders for my signature chicken fried steak and any other breaded items.

I’m willing to bet not. From experience in the industry, for every person who is a great tipper there is at least one who is a crappy tipper. So they balance out. 

That aspect of Italian history made visiting different cities really interesting, because you could see variations in architecture and cuisine in each one - it really was clear that they’d been separate entities for a long time.  Makes it really worth it to explore a lot of different cities if you can manage it.
