Another option to add to the roast crispy/bacon angle: Cut in half, toss with 50/50 neutral oil/sesame oil, roast til crispy (400 should work) then toss with whole grain mustard, sriracha, soy, and slivered red onions. Plastic wrap while steamy to soften the onions a bit. Yummy.

As far as I know, it's just considered an Island whisky, not an Islay one. They do malt a portion of their own barley, and also use some unheated mainland barley. I wouldn't consider all Island malts overly peaty, but most Islay whiskies are.
