I assume you’re right, which is fascinating. They’re large enough that they must have tested a variety of recipes over the years and decided to keep the worse tasting version each time for this reason.

I don’t know if that’s technically true. I prefer crispy fries so I’m with you in general but I think there are decent fries that are just soaked, like Five Guys’, which are relatively soggy but still taste way better than In-N-Out’s.
