I think the old trick from The Joy of Cooking is to put a tablespoon of water on each egg and put the lid on it. This steams the egg so it stays white instead of fries.

I’m sure it’s due to small sample size but I’ve had 100% luck with using a pressure cooker. The shells just peel right off. No other method has come even close.
