I’m not sure why readers are complaining. This seems like a fair and valid test of small farm beans vs factory farm beans. I suppose the test could have been improved by having it be a blind tasting to eliminate any unintentional bias caused by knowing which was the more expensive product.

Totally disagree. Cooking is one of the few remaining subjects where a book is usually much more useful than a web page, since you can easily move them around, can survive splashes and spills, and you can take notes in the margin of adjustments you have made to recipes you use frequently.
