Sounds logical for sure. But unless you’ve actually calculated it then you’re just shooting from the hip. I can choose how my beef was raised, but I can’t choose where my soy comes from.

Don’t know what your experiment was, but I made a decent ‘mexican’ pizza crust substituting 1/3 of the flour for corn flour. I tried the same with cornmeal and it wound up too ‘crackery’ if that’s a term.
