So, even if you as a server got stiffed or undertipped, the bartender usually does not because servers don't want to create ill will between themselves and the bartenders.

Exactly. I'm an extremely generous tipper and I almost always leave a cash tip. Charge tips get reported to the IRS directly. Cash tips must be reported by the server.
As a server for many, many years, I always appreciated any larger than average tips coming via cash, so as not to mess up my tip percentage ratio.
