To be safe for celiac, you have to prove the absence of gluten to 20ppm (parts per million). That means processors have to be very careful and very strict that there’s not even flour in the air.

It has. Also, when you order gluten free in a restaurant you have to be super clear that you have Celiac’s Disease and are not just fad-dieting because if you don’t they don’t put a lot of effort into avoiding cross-contamination (sometimes they don’t anyway).

Except I wonder if the quality control has gone down since gluten-free diets became a fad. If you’re just trying to cut down on carbs and you end up eating either of the two recalled cereals, no big deal. If you have Celiac disease, you end up in the hospital.

You have to read the fine print. Some of them won’t have gluten as an ingredient, but may be contaminated with gluten if non-gluten free foods are processed near it. Not a problem if you’re trying to cut gluten out for dietary reasons, but a huge problem if you have celiac disease.

I don’t think he messes with any of it because he doesn’t trust the labels. I think it is quite severe for him so he doesn’t mess around.
