Engine power will fall off over time if you don't change it. Not sure how long this takes, keep an eye on the oil health indicator in the shop.
More to do than what? We're talking about a video game here. It's not that technical. I agree with your assesment of actual physical engine break-in.
I don't have a precise read on the algorithm used for engine break-in. The numbers are arbitrary to reality, but consistant within the game. It seems like all cars get a roughly 5% increase in power from what is 'advertised' in the dealer menu.
The engine oil trick is meant as a way to skip the engine break-in process. If you don't change the oil on a 0.0 (or near) mile car before you begin driving, the power will rise over a 150 mile duration to its peak power.
