I posted the recipe up thread but you can find any sweet potato bisque recipe and replace the diary with almond milk or coconut milk. I used coconut milk because it is more rich.

I get that for sure although I am aware of some creamy roasted vegetable soups being called bisques. Wikipedia told me as much before I posted it to instagram.
I apostrphized “croutons”, should’ve done the same for “bisque”
It was very easy. It all came about because I had a corner of bourbon left in my liquor cabinet, 3 sweet potatoes and assorted other vegetables in the crisper, a can of coconut milk and chickpeas in the cupboard and some vegetable broth that I had frozen from a week or two ago. I don’t know the exact measurements…
Roasted chickpeas are a favorite snack of mine.
They have the added benefit of staying crunchy longer than bread would in a soup like this.
Oh they are just oven roasted chickpeas playing the role of croutons. Don’t let them hear you say that though.
