I know trees respawn every time you reload the world (by fast traveling, sitting at a campfire, etc.) and fruit takes at most 24 in-game hours.

When you say the gulch, do you mean the bottom of the canyon where Boom Bam is, or the Breach of Demise? I already tried the former and found… cool saffina. Which was a pretty big middle finger from the game if you ask me.
