In my exp with wings i found it to be quite the opposite. While the taste and texture were good, i still prefer my baked method (toss in flour and spices/seasons - let sit for an hr, bake @ 400 for 1hr flipping once) to the sousvide. You still get a crispy texture, and saucing changes up the flavor.
