I did something similar in a 2CV a few years ago although not from the roof but from the backseat. every controls routed under the front seat so people walking by wouldn't see it. The look people walking by gave me will remain in my memory for quite a while...

I work in a fishmongering business andI’d love to get an EV chassis-cab dually truck with about 200miles of range and provision for extra batteries for the auxiliaries such as a roof-mounted cooling unit but here in europe I think the main restriction comes from the fact that above 3.5 metric tons (about 7000pounds)

It is kind of a quick release system. Peugeots and Citroëns from this era had a an orientable rear suspension based on 4 flexible rubber bushings allowing the wheels to turn a bit during hard cornering. Very nice in terms of handling but not really made to whack a curb at full blast...
