The did have the Star Trek Experience at the Las Vegas Hilton for a while there, but that's gone bye-bye. If they had built the Enterprise, it probably wouldn't have flopped. Of course, Vegas does have the reputation of being the place where entertainment properties go to die. Just look at Elvis.
