Most legitimate dealers will just eat it as it’s worth the hassle to convince the customer to come in, reprint paperwork and go through everything again. I have seen people come back in with a better rate/lower payment if a bank took forever to approve a deal, so don’t automatically dismiss a call.

I prefer 3rd gear, especially in my old 5-speed Mazda. Straight up to 5th gives me enough power if I really need to move in the ST.
