I guess personal preference. I use command-tab so for me I could take this or leave it. Once an app is open I don’t scroll to the dock to bring it to the front. I just use command tab to cycle through and let go on the app I want to jump to instead of scroll down to the dock etc.

As mentioned in comments, you can ad any folder not just sidebar favorite folders to the dock. i have all my Adobe apps in a folder that is not in the sidebar favorites for instance...
