No; apparently they asked him to come back, and he declined. It made the Tristin scene a bit jarring, but I'll forgive it because it Liza Weil is so amazing when she's in full-on Unhinged Paris mode.
On number 2; I thought the same, although thinking about it now, perhaps Jess was Luke's best man, so didn't need to be on the guest list? I dunno; it seemed odd as presented, but there were a lot of quirky moments like that throughout.

In service of the "full circle" theme, it seems like she works at the antique store, I guess? She was there, even wearing her mother's coat, when Lorelai dropped the papers off. Disappointing for us, and sad for the character as well. :(

I was admittedly pretty out of it by the 4th episode and didn't make that (probably completely obvious) connection. It does make the ending a bit more palatable, though I still don't love it.
