So my logic is why spend more than the base model? 65-70k for an extremely cool car is much more reasonable than 98-108k for a slightly faster extremely cool car that is still slower

True, but also keep in mind that the 2017 GTR will likely have and even higher MSRP than the previous year so we're looking at 125k+ whereas all but the Ford GT come in well under 100k. I prefer the 2012 vintage of GTR that is 99% as fast as the current one but only cost 90k new...
