Keeping a fuel log might make sense if you also keep a log of all the maintenance and repairs on the vehicle - definitely increases resale value.

The shimmy can be (very temporarily) cured with a super-accurate alignment and balance, or more permanently cured with relatively cheap chassis bracing. Considering a hardtop is hard to find for less than a grand these days, I'll likely grab $400 of chassis bracing if it ever bothers me enough to fix.
You have to learn to sit properly. It took me probably a week to figure out my miata posture. I'm 6' and fit just fine (in my 1993) even without a foamectomy.
Yeah the Ford Ranger XLT was the truck of choice for kids without enough money for an F-150 at my high school (in Texas, the truck is not optional. Only the model level). On any given day, there were probably 100 of them in the parking lot. Fantastic tearing-up-shit-mobile.
google "foamectomy". You can fit. If things get really bad, you can take the rails out, bolt the seat to the floor, and get another few inches out of it.
Doesn't even need to be a mustang. I have done some serious hooning in Santa Fe's, Fusions, Stratuses... Though the noise that comes out of a Stratus is so horrible that I could barely stand to use the loud pedal.
