How the engines produce torque is the easiest explanation. Engines are different, different cylinder, head and valve design. Different timing of fuel and ignition. Different intake track designs. They all produce different power output at different rpm.

Sounds like possible exhaust leak, one of the high pressure fuel pumps or tappet lifter for them. Similar sounds also appear on newer engine that use multispark ignition coils, bit then the noise should go away when they are in normal single ignition mode. I'm not sure if Ford deploys multispark or not.

I've been about 16o on a motorcycle with a steering damper and that was scary as shit. A pedal bike with little tires. I won't even pretend to have the guts to try that. Let alone half that.
