Yup! I would always had my salmon too dry. With sous-vide, fishes are now so freaking soft and juicy and delicious!

Oh I agree and I consider it a pro most of time for me. I get home from work about an hour or so before I’m ready to eat, so first thing I do is shake some Montreal Steak seasoning each sides of our Top Sirloins, bag them, drop them in the sous-vide bath, done!
