I think Coldhands was a regular wight that was either freed or enslaved by the Three-Eyed Raven (which suggests that Bran could do the same? Possibly... to the dragon?). Lady Stoneheart was reanimated by the same magic that brought Beric and Jon back to life, which seems to leave a lot more of the person’s soul…
