Usually to make it easier for those transitioning to veg diets or those wanting to go for some meals without meat in them but still wanting the experience.
Because sometimes people choose a diet not to avoid a particular food, but to avoid that food’s perceived disparate environmental impact compared to the alternative (despite how flawed their reasoning is in choosing that alternative).
