This! I love vinegarry flavored foods (pickled, kimchi, etc), so whenever I have perhaps a healthy meal but missing some flavor, balsamic vinegar is one of my go to items. If it's a salad, use it straight up. If it's a protein dish, I sometimes reduce the balsamic to make it a little thicker with a more intense flavor.
I'm surprised you couldn't find grocery stores that are open. Most all of the major chains in San Diego have limited hours (our local Ralphs is open 8am-5pm). Must be a regional thing.
