Also, I think the show was smart enough to make me think that winning the contest was a possibility. It was Gayle's money, not Bob's, and all it really would have cost is Bob lending less money to Gayle.
Ultimately the fact that "bad" episodes are this good is the reason "Bob's Burgers" is one of the best shows on television. A show that had nothing but episodes this good would still be pretty good.
"Bob's" has a "Hey Arnold-ish" loose continuity for sure, but I'd be a little disappointed if the Belchers became anything but on the brink of total poverty. It's part of the charm.

I've realized that Gene is best in a side role. As a quip machine he's fantastic, but when you focus too much on him it's weird/gross.

This is true, but Rudy is much more chill about it. Charlie Brown is perpetually anguished, and Rudy is excited to be there.

I feel like RSR and Louise are a great match, too. Louise is a force of nature, and RSR is always up for an adventure. She'd be pulling him in on these crazy schemes and Rudy would totally roll with it (which is basically their relationship now, actually…).

And the reason Fischoeder, who you mentioned, keeps coming back isn't that he's a "friend", it's that he either keeps trying to offer Bob some sort of deal or he inserts himself and Bob can't do anything about it since he's his landlord.

I cannot disagree more. Every single one of those characters with the possible exception of Jimmy Pesto has undergone character development and had depth added to make them more compelling. One of the strengths of the show is the understanding and compassion it has for its various weirdos.
Why is writing a character a certain way lazy? I don't get that.
I knew someone would mention "King of the Hill". I understand the similarities in that sense, but I really never found that show funny. There's no particular reason I can name except that the humor didn't land for me. I've always found "Bob's Burgers" WAY better.
Bob's Burgers is such a refreshing change of pace from other "adult" cartoons. It can make sex jokes if it wants to, but it doesn't use them as a crutch, and it doesn't mistake shock value for humor. There's no gimmicks. That alone makes it stand out in a big way.
