My wife's XV Crosstrek is CVT and I honestly can't complain about it. It did feel a little weird at first when it would hold a certain RPM for a bit, but it performs just fine.

Kind of. The 2009 had a 2.5l whereas the 2015 eked out a few more HP on just a 2.0l engine. The STI as mentioned is what really needs a power bump, the WRX has gotten pretty close to it in horse power and the STI has remained unchanged in that department since 2008, sitting at 305HP.
Well my 2015 has more power (268) than my 04 had (227) while also getting much better fuel economy than the old ones did. But I'm with you, give me more power!

Depends on what someone calls highway speed, but typically ~2,200 - 2,500 RPM in 6th gear.
It does better than that. Over the first 10,000 miles I had a city/hwy combined 28.5 MPG. On the highway I get ~36 MPG. I drove from Austin to Santa Fe to Las Vegas to Utah and back a few months ago with my 2015 WRX, so I had plenty data samples.
Hydration helps more than most people would expect, don't neglect it.
