You do realize that there are a larger number of Mexicans living near the border by far than there are in Chicago right? You don’t see how being closer to Mexico and being among a higher percentage of Mexicans would help them come up with better Mexican food?
I’d be willing to bet that Texas and California have better beef since they’re both in the top 5 for cattle production, but Illinois has pigs so it balances out. It’s insane to think that those other cities don’t have their own tortillerias though, or that they’d be any worse than a place that is over 1500 miles away…
I’ve honestly had better tacos in LA than in Mexico so I don’t really buy the whole “real Mexican street food” thing. If you’re going to judge based solely on authenticity then you can get “real Mexican street food” in literally every major city.
